Day 2 started a little early (we are used to having a child with a regular schedule in the house, thus we have a similar schedule). We got up, needing nourishment (i.e. coffee) and made our way to the hotel restaurant.

 

Adrienne had pancakes with a side of bacon. The pancakes were medium fluffy with a light crisp to them and just a hint of cinnamon, the bacon was crispy but not burned. My wife and I disagree on how bacon should be cooked – she feels that this is just perfect and she is wrong. I love her dearly, but will not concede this point.

 

I had Golden Crab Eggs Benedict with a side of rosemary and red pepper potatoes and (drumroll please) … they did it! They fixed what was wrong with Eggs Benedict all along! It was so simple! English Muffin (the only place for the muffin in modern society aside from the Egg McMuffin, which should only be consumed in event of caloric emergencies (I digress (and further parenthesize) but stay with me, for example on the way to the hospital before having a child, as we did with ours)), replace the Canadian Bacon/ham with shredded crab, two poached eggs, and hollandaise sauce – it’s brilliant! Essentially, the problem is that the consistency of the ham/CB vs. poached eggs is all off: one inevitably ends up either destroying the delicate poached eggs in order to cut the ham or one ends up with a mouthful of ham. The crab was shredded and were perfectly matched with the delicate eggs. The hollandaise was creamy and finished the meal. The potatoes were crispy/crunchy on the outside with a light olive oil / rosemary crust and hot and creamy on the inside. Onions and red peppers similarly accompanied the potatoes. The coffee was black and hot and got the job done.

 

After we wrapped up breakfast, we sat at the poolside and Adrienne read about our most recent former first lady and I read about fascist dictators and the atrocities they have perpetrated against our poor and vulnerable species – it was a blast!

 

After a swim in the pool, we had lunch on the beach – I am amazed how much of a workout sand-walking is for the plantar muscles and the gastrocnemius and tibialis anterior. If you’re reading this and planning a vacation to T&C, do some lower extremity workouts before coming.

I had a Mahi-Mahi fish burger – blackened fish grilled with a matched pineapple BBQ sauce. Beach food for sure, but delicious! After lunch, more reading. Right now, Adrienne is getting a massage – we thought we were scheduling a couple’s massage but they only have one table so I guess we’re doing our massages in series.
