Where the rooms have no numbers

This morning started off slow: it started raining during breakfast and didn’t let up until about lunchtime. Breakfast was more of the same, but during the morning reading session I finished Tuck Everlasting. It was a quick and easy YA read, but it was fun and sometimes it’s nice to have another quick book under your belt.

 

Lunch was fun: Adrienne had a mango/strawberry margarita and I had a mango mojito – refreshing, sweet, the perfect cap to a lazy Caribbean morning. We shared an appetizer of conch fritters and I had a Mahi-Mahi Nicoise salad – hearts of romaine and butter lettuce, grilled Mahi-Mahi, boiled egg halves, olives (green and Kalamata), carrots, avocados, all topped with a citrus vinaigrette. Nothing too heavy, but quite nice. The conch fritters – conch is a mollusk so the meat is not unlike octopus (think calamari) but it’s a little bit chewier, so in the fritter it’s chopped up, mixed with flavored breadcrumbs, and deep fried – not too dissimilar from a hush puppy. This version was a little bit spicy, so I ate most of it myself.

After lunch, I grabbed my gear and went snorkeling – yesterday I had a really great encounter with a sea turtle, but my GoPro was mounted at a funny angle and I basically didn’t get any footage of the turtle. Today, I was determined to right that wrong. I forgot a wrist tether for the camera, so I made one out of a shoelace for a pair of shoes that I’m not currently wearing. I went out, had trouble seeing much, but on the way back captured this footage. I was really close to the turtle, the angle of the GoPro is deceptively wide – I was very near to touching it and, had I had fins on, would have petted the little guy.

 

 

Dinner tonight will be off of the resort at a place that our family friend recommended – I’ll be sure to keep you all updated!
