After the last post, I went out snorkeling again and was rewarded with this nice video of a (smaller, likely adolescent) sea turtle. I was so close and I almost touched him! I have a lot of pictures from the GoPro that will take time to sort through – hopefully I’ll get some uploaded the weekend we get back.
I came back to the room, showered, and got ready for dinner. Dinner reservations were made online about 6 weeks ago because this restaurant came so highly recommended by our family friend, and, apparently, tables are hard to come by. Fortunately, I married a planner!
The resort had arranged a taxi driver – Luigi – who picked us up in his ridiculously oversized van. It’s really more of a shuttle. As he drove, I pondered how odd driving really is. He’s driving on the wrong side of the road but the right side of the van – to what I’m used to – which means in Turks and Caicos he’s driving on the right side of the road but the wrong side of the van! The rules of the road seem a little odd – at one point I’m reasonably certain that right-of-way was determined by linear momentum (p=mv) where our momentum was larger because we had a larger van (mass) compared to the very small car opposing us and we were going faster (velocity) because Luigi had his foot firmly placed on the gas pedal. We made very good time.
The restaurant is Coco Bistro, is not far from our resort, and has great ambience. For drinks, Adrienne had a Deliciousitini that was vodka, pomegranate, and lemonade (we believe) and I had a Dark and Stormy that was dark rum, ginger beer, and a lime wedge.
For appetizers, Adrienne had Korean beef Bulgogi tacos – there were two with an Asian slaw, thin sliced pickle on top, shaved radish, and peanuts (I ended up with the pickles).

I had Conch 2 Ways: first was sweet and sour with fresh diced pineapple to accompany it, second was a ceviche martini with lemon, hot pepper, bell peppers, and onions. The meat was far more delicate compared to the fritters we had earlier in the day.

My dinner was a pepper crusted tuna with tropical fruit salsa, a lime-ginger white butter sauce, grilled asparagus, and sesame crusted rice balls. The tuna was perfectly rare and seared. I saw a video on the internet recently about rice balls and thought – that would make infant consumption of rice much easier and cleaner! Now I’m going to have to try it! It was really interesting – there are really two kinds of rice here – the white rice in the center of the ball which is pretty normal rice and the crusty rice which had a really nice nutty flavor to it from being pan-fried. Overall, high marks for the mouthfeel (that’s for you, Rob) and great flavors of something (rice) that’s normally considered boring!
Adrienne had a blackened grouper with a red Thai curry sauce and Jasmine rice. The grouper was topped with a mango chutney and placed atop mixed vegetables. The red Thai curry was very smooth and creamy with only a hint of spice, and the mango chutney was a real treat!
Dessert was a sticky toffee pudding with a scoop of homemade vanilla ice cream and fresh berries and an espresso – this was the perfect finale to a wonderful dinner. I am becoming increasingly suspicious that the house coffee at our resort is instant coffee, and this was real espresso, so it was a real treat!
We came back to the resort after dinner, and settled in for the night. We fly out tomorrow so it will be a short post (if at all). I don’t want anyone feeling let on like that one time in Seattle.
I too married a planner and also he’s thankfully a careful packer for trips! We were left hanging on that Seattle post!! Sounds like a wonderful trip. I’m so glad you two got away for a bit.

That meal looks amazing. I’m now very hungry.
Alas, I’m also stuck in an airplane seat getting ready to take off, so there will be no sticky toffee pudding or espresso for a while.
